Hi! I am Kayoko Takeda, a retired bank employee, I'm graduated in nursing, I like to cook and has never lost my
interest for health-related matters. I have an autoimmune disease, which in 2007 attacked my lungs and I had 50% of my lung capacity affected. Because of medications and low immunity, I started researching healthy eating that could help strengthen my immunity.
My first contact was with Kefir and Kombucha. One day I watched a video of a lecture that was given at Harvard University by fermented food researcher Sandor Ellix Katz who talked about Natto, Koji, Miso that are fermented from Japanese cuisine that I grew up eating and became interested in learning more about fermented foods and probiotics.
